I finally received an email back from a couple of organic food producers. They both state that they use plastic to line their cans and that the plastic does contain bisphenol-A. They both state that the use of this plastic is fully compliant with the FDA. I am now recommending that people limit their canned food consumption especially acidic foods like tomatoes.

Bisphenol A (BPA) is one of the major building blocks of the epoxy
coatings used to line cans. This is one of the very few FDA approved
coatings that will provide the safety and shelf life that our consumers
expect from our products.

Tests have indicated that some minute quantities of unreacted BPA can
be extracted from can coatings. However, patient ^[3] these amounts are extremely
small and well below those levels deemed to be of concern for public
health. We do not test our products for traces of BPA.
